I call this ‘salad bag’ pesto as it is essentially a blitzed up bag of salad with added herbs. A great way of getting leafy greens into small children. The black garlic adds in some sweetness that balances with the bitter rocket and watercress but you could miss this one out.

Sweet Potato & Kidney Bean Burrito

​I’m not sure whether open burritos are a ‘thing’ in home cooking but today’s recipe used to be my ‘go to’ burrito recipe and these days it is still a favourite but without the tortilla. So open burrito it is….
The quantities I’ve given work perfectly to feed one as an open burrito or will fill four flour tortillas to make actual burritos for two to four (depending on what you are serving it with). If you like the sound of this recipe but can’t be bothered with all of the different elements just make the kidney bean mash and serve on toast for a quick supper.

Gluten Free Pastry

This gluten free pastry is taken from Green Kitchen Stories. I use it for sweet tarts as well as savoury quiches. It works really well in mini tart tins as you can get the pastry rolled out nice and thin for that proper shortcrust taste. However, with a bit of care you can make a full size quiche and really pack it with filling.
