Gluten Free Pastry

This gluten free pastry is taken from Green Kitchen Stories. I use it for sweet tarts as well as savoury quiches. It works really well in mini tart tins as you can get the pastry rolled out nice and thin for that proper shortcrust taste. However, with a bit of care you can make a full size quiche and really pack it with filling.
